While faming and penguins may seem worlds apart , they share common themes like adaption , community , efficiency , resilience and a deep connection with the environment.
Vineyards
The vineyards are situated in the Paardeberg area and on the Drakenstein slopes , where grapes ripen optimally at different times. Granite and Hutton soils provides freshness , while shale soils contribute to full-bodied structure. Ideal planting locations with hot daytime temperatures and cool nights contribute to the slow , late ripening of this Shiraz resulting in unique spicy flavours with characteristic black pepper.
Winemaking
This crisp , fruity Chenin Blanc is characterised by juiciness , freshness and upfront aromas. It presents tropical flavours with layers of lime , melon and fresh guava fruit. A wine with typical Chenin Blanc flavours which has become a firm regional favourite. Delicious with chicken , mild curry dishes or salads or simply on its own.
The grapes were harvested during March at optimal ripeness of appoximately 24* Balling. After destemming , cold-soaking took place which reduces the fementation temperatures in order to allow for a slow , soft extraction of colour and flavours from the grape. skins. Prolonged skin contact of one week resulted in a richly intense colour with bold spicy flavours. Maloatic fermentation in stainless stell tanks further softens the wine and produces an elegant, smooth Shiraz with gentle tannins and a firm fruit structure. A portion of the wine was racked from the skins before the fermentation was completed and the rest were left on the skins for 7 days after fermentation. The components were selected and blended after 6 months on the lees.
TASTING NOTES
This smooth Shiraz shows layers of sweet plums and berries. This sweet red shows a deep and velvety palate with a beautifully balance acidity. Wine pairs well with hot and spicy dishes , deserts or on its own.
